Chicken with lemon and herbs in foil

Light, refreshing! Easy to make in advance for entertaining.



  • 1 cup Fresh Mint, minced
  • 1 cup Fresh Dill, minced
  • 2 Garlic, minced

Step 1

Mix garlic and herbs together in a small bowl. Pre-heat oven to 350.


  • 4 12 Boneless Chicken Breast
  • 1 teaspoon Kosher Salt, and pepper

Step 2

Flatten chicken breasts (pound). Arrange the pieces on foil and season with salt and pepper. Sprinkle herb mix over chix breasts.


  • 2 Lemon, sliced
  • 4 tablespoons Butter

Step 3

Slice lemons and arrange 2 or 3 slices over each breast. Dot with butter. Seal the packets. Set on baking sheet and cook for 30 minutes. Allows guest to open packets at the table.
