Chili Stuffed Acorn Squash

Step 1

Preheat oven to 400. Sptay a baking sheet with nonstick.


  • 2 Acorn Squash, hallved and seeded

Step 2

Place squash halves on the baking sheet, cut side down, Bake until soft, 30 to 35 minutes.


  • 1 pound Ground Beef
  • 12 teaspoon Kosher Salt

Step 3

Meanwhile, in a large skillet, brown beef over med-high heat, breaking it up as it cooks into smaller pieces. Season with s/p.


  • 13 cup Red Onion, chopped
  • 2 cloves Garlic, crushed

Step 4

When meat is cooked through add onion and garlic, cook 3 minutes over medium.


  • 10 ounces Rotel Diced Tomatoes with Green Chilies
  • 12 cup Tomato Sauce
  • 12 cup Water
  • 34 teaspoon Ground Cumin
  • 14 teaspoon Chili Powder
  • 1 Bay Leaf
  • 14 teaspoon Paprika

Step 5

Add the tomatoes, tomato sauce, water, cumin, chili powder, paprika and bay leaf.

Step 6

Cover and simmer over med-low about 25 minutes stirring occasionally.

Step 7

Remove the bay leaf, flip the squash over anf ill each half with 3/4cup chili.


  • 6 tablespoons Shredded Cheddar Cheese

Step 8

Top with cheese and bake until melted, about 5 minutes.

Step 9

To reheat, bake in a 350 degree oven 20 to 25 minutes or until heatedc through.
