Chilli & Garlic Prawn Courgetti Salad

A filling veg-gasmic salad that you can batch prep, making it perfect for dinner, then lunch the following day, or to share with a loved one!

Directions

Ingredients

  • 1 large Courgette, spiralised
  • 14 Iceberg Lettuce
  • 14 Cucumber, sliced & quartered
  • 6 Cherry Tomatoes, quartered
  • 1 handful Baby Spinach
  • 14 Fennel Bulb, chopped
  • 1 Sweetcorn, cooked

Step 1

Wash, slice and prepare all the veg, and arrange into the bowls, or boxes if you're packing up / batch cooking.

Ingredients

  • 10 Tiger Prawns
  • 1 clove Garlic, crushed
  • pinch Scotch Bonnet Chile Pepper, finely sliced, to taste
  • 1 tablespoon Coriander Leaf, chopped
  • 14 Leek
  • 1 teaspoon Unrefined Coconut Oil
  • 1 dessert spoon Soy Sauce
  • 1 teaspoon Local Honey

Step 2

Finely chop the leek and coriander, crush the garlic, really finely slice the chilli. Heat a pan with the coconut oil, add the ingredients and sweat until softened, then add the prawns, honey and soy sauce. Cook for about 5 minutes, turning the prawns so they're cooked through, and the mix is starting to go beautifully sticky.

  • Black Pepper, to taste

Step 3

Divide the prawns evenly, toss the salad, serving it with home made french dressing, a little salt and pepper. Enjoy!
