This is one of my favorite recipes and I tried to make a little healthier by baking instead of deep frying.

Directions

 

Step 1

Preheat the oven to 350 degrees

Ingredients

  • 1 pound Lean Ground Beef
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Garlic Salt
  • 2 teaspoons Chili Powder

Step 2

Brown and season the ground beef in a skillet over medium-high heat. Drain excess grease.

Ingredients

  • 1 White Onion, medium sized, diced
  • 1 Green Bell Pepper, diced
  • 7 ounces Canned Diced Green Chili Peppers, drained
  • 7 ounces Canned Corn, Whole kernel

Step 3

Add the onion, bell pepper, diced chiles and corn. Cook for about 5 more minutes, or until vegetables are tender.

Ingredients

  • 2 cups Taco Sauce, Hot

Step 4

Stir in the taco sauce, stirring until blended. Cook until heated through, then remove from heat, and set aside.

Ingredients

  • 16 ounces Refried Beans, can
  • 8 Flour Tortillas, burrito style

Step 5

Open the can of beans, and spread a thin layer of beans onto each of the tortillas.

Ingredients

  • 16 ounces Shredded Mexican Blend Cheese
  • 1 tablespoon Butter, melted

Step 6

Spoon the beef mixture down the center, and then top with as much shredded cheese as you like. Roll up the tortillas, and place them seam-side down onto a baking sheet. Brush the tortillas with melted butter.

Ingredients

  • Green Leaf Lettuce, shredded
  • 1 Tomato, diced

Step 7

Bake for 30 to 35 minutes in the preheated oven, or until golden brown. Top with lettuce and tomato. Serve.
