Chocolate Mint Coconut Cookies

Not your traditional cookie, but this is to die for.



  • 3 ounces Chocolate Chips, package
  • 1 teaspoon Instant Espresso, ground fine

Step 1

Add chocolate chips and dry espresso to double boiler, boil water and melt chocolate.


  • 15 ounces Eagle Brand Condensed Milk

Step 2

Stir in condensed milk and cook until thick, about 15 to 20 minutes, stirring occasionally.


  • 1 12 cups Coconut, shredded
  • 2 cups Walnuts, chopped
  • 1 teaspoon Mint Extract, or flavoring

Step 3

Remove from heat, add coconut, nuts, and mint. Stir to combine.

Step 4

Drop by tablespoons onto greased cookie sheet or silpat (not greased of course) and bake at 275 degrees for 15 - 20 minutes. Tops should be slightly cracked.
