Chopped Chicken Liver Spread

Chopped Chicken Liver Spread

Tasty liver spread. Allow time to chill and let flavors meld. Can be served right away but better when chilled for a few hours or overnight.



  • Olive Oil
  • 2 pounds Chicken Liver, rinsed
  • 1 medium Onion, sliced
  • 1 teaspoon Kosher Salt, or to taste
  • 12 teaspoon Black Pepper, or to taste

Step 1

Put a small amount of olive oil into a large, non-stick skillet and heat over medium heat until hot. Add chicken livers, sliced onion, salt and pepper to pan. Cook until livers are browned and onions are cooked.


  • 3 cloves Garlic, pressed
  • 13 cup Dry Sherry, more or less to taste; do not use cooking sherry from the grocery store it contains too much salt.

Step 2

Add sherry and garlic to the pan. Stir to combine. Lower heat to medium and cover. Cook, stirring occasionally until livers are cooked through. Mixture should still have a little bit of liquid to it. Otherwise give it another shot of sherry.

Step 3

Remove pan from the heat and allow to cool slightly.


  • 4 large Egg, hard-boiled and peeled
  • 12 small Onion, cut in chunks

Step 4

Put livers into bowl of a large food processor along with 3 (reserve the 4th for garnish) of the hard-boiled eggs and the half raw onion. Process until smooth. Move spread to serving bowl.

Step 5

Chop the reserved hard-boiled egg and sprinkle it, along with a little bit of chopped raw onion, over the top of the liver spread. Note: At this point you can serve it if you wish but, it is much better if allowed to chill for a few hours or overnight.


  • Small Party Rye Bread Squares, or any cracker

Step 6

On day you will be serving the spread, arrange party rye squares on a baking sheet and toast in pre-heated 350 degree oven until toasted. Note: Keep an eye on the bread. It can go from toasted to burnt really quickly.

Step 7

Serve spread with toasted party rye or cracker of your choosing.
