Ciabatta and Mozzarella Sandwich With Bacon, Tomatoes, and Egg

John: this is a recipe I keep around for a super-easy, super-fast all-in-one dinner for those busy nights where there's no time to prep.

Ingredients

  • 6 tablespoons Mayonnaise
  • 8 Eggs, Scrambled
  • 18 slices Bacon, cooked
  • 8 Plum Tomatoes (Italian), sliced
  • 6 slices Buffalo Mozzarella
  • 6 leaves Romaine Lettuce
  • 6 Ciabatta Bread, 8-inch loaves

Step 1

Coat each half of the bread with the mayonnaise. Top the bottom half of each loaf with a piece of lettuce, a slice of cheese, tomato slices, 3 slices per bacon and some egg. Top with other half of the loaf, and slice in half.
