Classic Adobo Sauce

A sauce made with chiles, vinegar, herbs and garlic that is popular in the Philippines as well as in Mexico. A great rub as well as marinade.

Ingredients

  • 3 Ancho Peppers, Large

Step 1

Cover chiles with hot water, let sit for 15 min.

Ingredients

  • 1 Onion, Large
  • 2 Garlic Cloves, chopped
  • 12 teaspoon Dried Ground Oregano
  • 14 teaspoon Ground Cumin
  • 1 Pasilla Stem, dried

Step 2

Combine chiles, and 1/4 to 1/2 cup of the water they were soaking in, onion, garlic, oregano, pasilla, and cumin in a blender and puree.

Ingredients

  • 14 cup Distilled White Vinegar
  • 1 12 teaspoons Sugar
  • 14 cup Vegetable Oil

Step 3

Saute the mixture in oil for 5 min add vinegar and sugar and bring to a boil.
 

Step 4

Reduce heat, simmer until thick about 5-8 min.
