Cranberry Granola Muffins |

Cranberries are larger and tarter than raisins, making a great muffin. This recipe develops a deep golden crust on the crown.

Ingredients
Step 1
Place granola in a heavy plastic bag and crush it (after measuring). Alternatively, pulse briefly in blender. Should be broken but not pulverized.

Put crunched granola in a mixing bowl and add buttermilk, cranberry, and vanilla. Stir.

Beat oil and egg into mixture.

Adding alternately, stir in dry ingredients. Mix lightly until blended and moistened thoroughly.

Line muffin tin with papers. Lightly spray with nonstick spray. Spoon batter evenly into muffin cups.

Bake at 400-degrees for 18-22 minutes until desired.
