Creamy Rice, Chicken & Spinach Dinner

  • 14 cup Roasted Red Pepper Dressing
  • 1 pound Boneless Skinless Chicken Breast, cut into thin strips
  • 1 12 cups Chicken Broth
  • 2 cups Instant Brown Rice, uncooked

Step 1

Heat dressing in dutch oven on med high. Add chicken; cook 3 min stirring occasionally. Stir in broth; bring to boil. Add rice; stir. Return to boil;cover. Simmer on med 5 minutes.


  • 4 ounces Neufchatel, cubed
  • 8 ounces Baby Spinach

Step 2

Add neufchatel;cook 2-3 minutes or until melted, stirring frequently. Add spinach. cook covered until wilted. Stir gently to mix in spinach.


  • 1 large Tomato, chopped
  • 2 tablespoons Grated Parmesan Cheese

Step 3

Remove from heat. Let stand, covered, 5 min. Stir in tomatoes and top with Parmesan.
