Creamy Wild Rice Soup

  • 12 cup Wild Rice, uncooked

Step 1

Cook rice as directed on package.


  • 4 slices Bacon, chopped

Step 2

Meanwhile cook and stir bacon in a large saucepan on med heat until crisp. remove from pan reserveing1 tbsp of drippings. place on paper towel to drain.


  • 12 cup Chopped Onion
  • 2 Carrots, chopped
  • 14 cup Flour
  • 4 cups Chicken Broth

Step 3

Add onion and carrots to drippings and cook 5 minutes or until tender crisp. Stir in flour cook and stir 1 minute. Add broth stir and bring to boil on high, stirring frequently; simmer on med-low for 10 minutes or until vege's are tender, stirring occasionally.


  • 12 cup Cream Cheese
  • 14 teaspoon Ground Black Pepper
  • 2 tablespoons Fresh Chives, chopped

Step 4

Stir in rice, cream cheese and pepper. Cook and stir 3 minutes or until cream cheese is melted and soup is thickened. Stir in half bacon. serve, topping with remainder of bacon and chives.
