Creole Chicken

You have to love the holy trinity of cajun/creole cooking! I know I do.

Directions

Ingredients

  • 2 tablespoons Olive Oil
  • 2 tablespoons Butter

Step 1

Heat olive oil and butter in a deep skillet over medium heat.

Ingredients

  • 4 cloves Minced Garlic
  • 1 Onion, diced

Step 2

Stir in onion and garlic, and cook until the onion turns translucent, about 5 minutes.

Ingredients

  • 14 teaspoon Old Bay Seasoning
  • 1 Green Bell Pepper, top and seeds removed and diced
  • 14 teaspoon Fine Ground Black Pepper
  • 2 teaspoons Sugar
  • 2 teaspoons Chili Powder
  • 12 teaspoon Salt
  • 28 ounces Crushed Tomatoes in Puree
  • 14 12 ounces Tomato Sauce, canned
  • 2 stalks Celery, diced
  • 1 Dried Whole Bay Leaf

Step 3

Stir in the celery, bell pepper, crushed tomatoes, tomato sauce, sugar, salt, chili powder, black pepper, old bay, and a bay leaf and bring to a simmer

Ingredients

  • 4 Boneless Chicken Breasts, cut into strips

Step 4

Reduce heat to medium-low, add chicken cover, and simmer 20 minutes, stirring occasionally until chicken is cooked through.
