Crispy Chicken Bites

Directions

 

Step 1

Preheat oven 400 degrees. Prepare baking sheet with parchment paper or coating lightly with olive oil.

Ingredients

  • 3 Boneless Skinless Chicken Breasts, (about 6oz)

Step 2

Cut into nugget-sized pieces, about 1.5 inches square. Set aside.

Ingredients

  • 12 teaspoon White Pepper
  • 14 cup Ground Almonds
  • 1 tablespoon Ground Flax Seed
  • 14 cup Wheat Germ
  • 14 cup Oat Bran
  • pinch Garlic Powder

Step 3

Combine (all dry ingredients) in a large container with a lid. Shake well. This is the coating mixture.

Ingredients

  • 12 cup Low Sodium Chicken Broth, (or use water)
  • 1 large Egg White, lightly beaten

Step 4

Combine in medium bowl.
 

Step 5

Dip each piece of chicken in the liquid mixture then in the coating mixture. Make sure each piece is well coated.
 

Step 6

Place on the baking sheet. When all of your chicken has been coated and your baking sheet is full, place in the oven and bake for 10-15 minutes or until golden.
