Crockpot Green Chile Chicken Enchilada

"Ok - here's the easiest and BEST green chile chicken enchilada recipe that I learned from my Mother-In-Law who actually used to have a green chile farm in Hatch New Mexico".



  • 3 Boneless Skinless Chicken Breasts
  • 4 cans Canned Cream of Chicken Soup
  • 2 cups Water
  • Green Chile Pepper, chopped (vary this depending on how many peeps you are feeding and how 'hot' you want it)

Step 1

Place 3 boneless chicken breasts in crockpot with 4 cans cream of chicken soup, 2 cups water and chopped green chiles

Step 2

Cook on low for at least 6 hours and the chicken will fall apart on its own or with the help of a fork.


  • Shredded Colby Jack Cheese
  • Corn Tortilla
  • Onion, sliced

Step 3

Layer the “soup/chicken/chile mix” in a casserole dish with CORN tortillas and shredded COLBY JACK cheese (and onions if you like them). I usually do about 3-4 layers of each.

Step 4

Bake in 350 degree oven for 20 minutes and you’re done!
