Crockpot Southwestern Chicken Soup

  • 1 pound Boneless Skinless Chicken Breast
  • 2 cloves Minced Garlic
  • 12 cup Onion, chopped
  • 12 cup Carrot, chopped
  • 1 cup Corn
  • 34 teaspoon Dried Mexican Oregano
  • 1 teaspoon Ground Cumin
  • 1 can Diced Tomatoes with Green Chilis, 10 oz
  • 2 cups Chicken Broth
  • 1 Lime, juiced
  • 1 cup Green Salsa, 8 oz
  • Salt and Pepper
  • 1 can Black Beans, drained

Step 1

Add all ingredients to crockpot. Cook on low 6 hours. Shred chicken breast. Add back to pot and cook 1 more hour. Serve with cheese and tortilla chips if desired.
