Cucumber W/Sun Dried Tomato Rolls

  • 2 Cucumbers

Step 1

Thinly slice the cucumbers longways on a mandolin at a 2mm thick setting. You can also use a vegetable peeler. Lay the cucumber on top of a paper towel lined cutting board while you prepare the filling.


  • 6 ounces Feta, crumbled
  • 3 tablespoons Greek Yogurt
  • 3 12 tablespoons Sun Dried Tomatoes, or red bell pepper, finely diced
  • 10 Kalamata Olives, roughly chopped
  • 1 tablespoon Dill, or oregano, roughly chopped
  • 2 teaspoons Lemon Juice
  • 1 pinch Pepper, to taste

Step 2

Combine the feta and yogurt, mash with a fork. Add the tomatoes, olives, dill, lemon and pepper. Stir well to combine.

Step 3

Place 1-2 teaspoons of the mixture at one end of a cucumber slice and roll up. Secure with a toothpick. Repeat with remaining strips. If not serving immediately, chill until ready to serve.
