Curry Sauce

Directions

Ingredients

  • 1 14 cups Vegetable Stock

Step 1

Begin heating the stock on medium heat in a separate sauce pan so that the stock will be at a low rolling boiling for use at the end of the process.

  • 3 tablespoons Butter

Step 2

Melt butter in the (main) saucepan

Ingredients

  • 1 Onion, chopped

Step 3

Saute onion until golden brown caramelize color (8-10 minutes) Note: Do not cover the saucepan during this recipe.

Ingredients

  • 1 clove Garlic, Crushed

Step 4

Add garlic and saute for 1 minute

Ingredients

  • 2 tablespoons All-Purpose Flour

Step 5

Add flour and cook for 1 minute

Ingredients

  • 2 tablespoons Curry Powder
  • 1 tablespoon Ground Turmeric
  • 1 tablespoon Tomato Paste

Step 6

Mix Curry, Tumeric and Tomato Paste into saucepan and remove from heat.
 

Step 7

Gradually add the stock into the curry while whisking.
 

Step 8

Add Saucepan back to heat and continue to whisk until sauce begins to boil and thickens (2 - 5 minutes)

Ingredients

  • Fine Sea Salt, to taste
  • Fine Ground Black Pepper, to taste

Step 9

Add Sea Salt & freshly ground black pepper.
 

Step 10

Serve sauce with pan fried pork or chicken thighs.
