Daphne's Bacon Makes Everything Better Apple Pie

I first came up with this recipe during the summer of 2009 in Seattle when my friend, Jenise, who was the Chef Event Manager for the Queen Anne Farmers Market asked me to enter their inaugural Blue Ribbon Pie Contest. The rules were simple, it had to be a fruit pie and it had to be entirely from scratch, including the crust. Eeek!

I'd never participated in such a competition before. I'd never even baked a pie. Hell, I don't even like fruit pies. Yet, I felt compelled to challenge myself -- that, and Jenise is a very persuasive friend, so I decided to make mine with bacon out of spite.

[NOTE: Apologies that the list of ingredients may include duplicated ingredients, but the limitations of this site won't let me divide them for recipe steps.]



  • 1 Frozen Pie Shell, if you are talented enough to make your own, then consider adding about 6 ounces of extra-sharp cheddar cheese.

Step 1

Pre-bake, according to package directions. After it's done, set it aside and set the oven to 400


  • 1 pound Sliced Bacon

Step 2

Divide bacon in half. Cook one half only until chewy, not crispy. Cook other half until crispy. Chop into bits, keeping each half-batch separate. Set aside.


  • 12 cup Flour
  • 12 cup Brown Sugar
  • 12 cup Brown Sugar
  • 2 tablespoons Unsalted Butter, sliced into pats

Step 3

Using hands, combine ingredients in bowl until crumbly, then mix in the crispy bacon bits. Keep in refrigerator.


  • 3 pounds Apples, peeled, cored and sliced to about 1/4" thick.
  • 12 teaspoon Fine Sea Salt
  • 14 cup Granulated Sugar
  • 12 cup Skillet Bacon Spread, can be purchased at the skillet diner, one of their airstream food trucks or online here: http://onlinestore.skilletstreetfood.com/.
  • 1 tablespoon Ground Cinnamon
  • 1 teaspoon Ground Nutmeg
  • 1 teaspoon Grated Lemon Zest
  • 1 tablespoon Fresh Thyme, if using dried, use 1 teaspoon.

Step 4

Mix all these ingredients plus the other half of the chewier bacon bits into a large bowl. If not very syrupy, feel free to add a little water.


  • 3 tablespoons Unsalted Butter, small cubes, kept chilled until use.

Step 5

Fill pie crust with apple mixture, layering pats of butter in various places throughout.

Step 6

Place pie on cookie sheet and add crumble mixture on top.

Step 7

Bake for 10 minutes uncovered. Then loosely cover pie with aluminum foil and bake for 40 minutes.
