Deep Forest Carob Cake with Fudge Frosting

This raw, vegan cake actually tastes like Black Forest Chocolate Cake!



  • 3 12 cups Raw Brazil Nuts
  • 1 teaspoon Sea Salt
  • 3 cups Medjool Date, pitted

Step 1

CAKE: Process Brazil Nuts and salt into a powder in your food processor. Slowly add dates.


  • 1 cup Carob Powder
  • 3 cups Shredded Coconut

Step 2

Empty into large mixing bowl and add carob and coconut. Mix well. Form into cake shape.


  • 1 cup Medjool Date, pitted
  • 14 cup Carob Powder
  • 14 cup Extra Virgin Olive Oil
  • 1 cup Water, as needed

Step 3

FROSTING: Place all ingredients into your blender. Blend into a smooth frosting. Frost your cake.

Step 4

Will keep for seven days in the fridge.
