Diablo Chili

If you are ready for a spicy yet flavorful chili this is it. It is not for someone who does not like Spicy, the name says it all.

Ingredients

  • 12 pound Bacon

Step 1

Place bacon in a large soup pot. Cook over medium high heat until evenly brown. Drain excess grease, leaving enough to coat bottom of pot Remove bacon, drain on paper towels and chop.

  • 1 pound Lean Ground Beef
  • 1 pound Ground Pork

Step 2

Brown beef and pork in pot over medium high heat and season beef while browning with a couple shakes of black pepper, chili powder and cumin just enough to give it some extra flavor

Ingredients

  • 1 Green Bell Pepper, seeded and diced
  • 1 Red Bell Pepper, seeded and diced
  • 1 Yellow Onion, diced
  • 6 Jalapeno Peppers, seeded and diced
  • 6 Habanero Peppers, seeded and diced, also wear gloves
  • 13 ounces Anaheim Pepper, or Cubanelle Peppers, usually 6, seeded and diced
  • 6 cloves Garlic, minced
  • 1 12 tablespoons Ground Cumin
  • 1 tablespoon Crushed Red Pepper Flakes
  • 3 tablespoons Chili Powder
  • 12 ounces Beef Broth
  • 28 ounces Crushed Tomatoes in Puree
  • 28 ounces Canned Diced Tomatoes
  • 6 fluid ounces Beer, I usually use a black and tan
  • 14 cup Sharp Cheddar, shredded
  • 8 ounces Canned Corn, drained
  • 6 ounces Tomato Paste
  • 5 dashes Tabasco Sauce, or Hot Sauce
  • 32 ounces Chili Beans, 2 16 ounce cans, drain excess liquid

Step 3

When meat is browned, stir in the bell peppers, onion, jalapeno peppers, habanero peppers, Anaheim peppers, garlic, cumin, red pepper flakes, chili powder, beef broth, crushed tomatoes, diced tomatoes, beer, cheese, corn, tomato paste, Tabasco sauce, beans and bacon.
 

Step 4

Reduce heat to low and simmer for 90-120 minutes depending on how long you have and how liquidy you like you chili I like less liquid so I give it the full 120, stirring occasionally.
