Easy Italian Broiled Pork

Quick and simple all-indoor "grilling" recipe. Can also be done outdoors on the barbecue!

Ingredients

  • 2 12 pounds Pork, --doesn't matter what cut you choose so long as it is thick-sliced. can be chops, tenderloin medallions, country-style ribs, or whatever.
  • 2 cups Bottled Italian Dressing, --you can create your own homemade vinaigrette if you want. i don't have the time usually.
  • 4 sprigs Fresh Oregano

Step 1

Place meat in a dish of a sufficient size. Combine the dressing with the whole sprigs of oregano and pour over meat. Marinate in the refrigerator for at least an hour (and three would be better!)
 

Step 2

Preheat oven to the High Broil setting (or just Broil if your oven only has the one setting). Position rack so that it is about 8 inches from the heating element. Remove meat from the marinade and place on a cooling rack over a sheet pan. Put this apparatus under the broiler and broil for about 6-8 minutes per side, or until the meat reaches an internal temperature of 145 degrees (farenheit).
 

Step 3

Remove meat from the oven and wrap in aluminum foil and allow to rest for approximately 15 minutes before serving. Some ovens will not keep the broiler elements burning continuously, so you will want to "prop" the oven door slightly open to allow heat to escape. This is ok because you are cooking the meat with direct heat, not relying on the ambient temperature of the oven enclosure. Be warned: this will rapidly heat up your kitchen. You can also do this whole recipe over the outdoor charcoal or gas grill.
