Directions

Ingredients

  • 1 pound Ground Lamb
  • 2 teaspoons Garlic, pureed
  • 5 leaves Fresh Mint, chiffonade
  • 1 teaspoon Lemon Zest

Step 1

mix all ingredients by hand until evenly incorporated. Form into 2 oz patties, brush with olive oil, season with salt and pepper, and grill to temperature

Ingredients

  • 16 ounces Yogurt
  • 1 Cucumber, peeled, seeded and small diced
  • 4 sprigs Fresh Dill, chopped
  • 1 teaspoon Garlic, brunoise
  • 2 tablespoons Extra Virgin Olive Oil

Step 2

For the Tzatziki Sauce: place all ingredients in a stand up mixer with the whip attachment and mix until evenly incorporated. Add salt and pepper to taste

Ingredients

  • 1 dozen Fingerling Potato, sliced

Step 3

Pan roast the sliced potatoes with olive oil and salt and pepper to taste

  • 4 Pita Bread, thick, cut into 8 3-inch rounds

Step 4

grill pita rounds until hot with grill marks

Ingredients

  • 1 teaspoon Vinegar
  • 2 quarts Water
  • 8 Eggs
  • 1 tablespoon Salt

Step 5

biol water with vinegar and salt for poached eggs. Poach eggs 2 at a time unless you have a larger pot

Ingredients

  • 8 Lamb Burger Patties, recipe included
  • 1 Tzatziki Sauce, recipe included
  • 1 bag Mixed Greens
  • 2 tablespoons Light Vinaigrette Dressing

Step 6

place hot lamb patties on the pita rounds, top with the poached eggs, pour Tzatziki Sauce. Add the fingerling potatoes and mixed greens tossed with light vinaigrette.
