Ingredients
Step 1
mix all ingredients by hand until evenly incorporated.
Form into 2 oz patties, brush with olive oil, season with salt and pepper, and grill to temperature

For the Tzatziki Sauce:
place all ingredients in a stand up mixer with the whip attachment and mix until evenly incorporated. Add salt and pepper to taste

Pan roast the sliced potatoes with olive oil and salt and pepper to taste

grill pita rounds until hot with grill marks

biol water with vinegar and salt for poached eggs.
Poach eggs 2 at a time unless you have a larger pot

place hot lamb patties on the pita rounds, top with the poached eggs, pour Tzatziki Sauce. Add the fingerling potatoes and mixed greens tossed with light vinaigrette.
