Directions

Ingredients

  • 2 tablespoons Olive Oil
  • 2 cups Onion, chopped
  • 2 cups Carrot, finely chopped

Step 1

Heat Oil. Cook onions and carrots until soft, @ 10-15 minutes.

Ingredients

  • 1 pound Hot Italian Sausage, remove from casings
  • 5 cloves Garlic, minced

Step 2

Add garlic and sausage. Brown meat.

Ingredients

  • 8 ounces Tomato Paste
  • 28 ounces Crushed Italian Tomatoes
  • 1 teaspoon Kosher Salt, pepper, too
  • 2 tablespoons Dried Ground Oregano
  • 2 teaspoons Crushed Red Pepper Flakes
  • 14 cup Fresh Basil
  • 1 tablespoon Light Brown Sugar
  • 1 leaf Dried Whole Bay Leaf
  • 10 ounces Frozen Cut Spinach, thawed, drained, squeezed

Step 3

When meat is browned, add additional sauce ingredients. Simmer until flavors are well blended, @ 15 minutes. Discard bay leaf.

  • 1 box Lasagna Noodles, Prepare per box instructions

Step 4

prepare noodles. COol in cold water for 5 minutes.

Ingredients

  • 2 Eggs, slightly beaten
  • 30 ounces Ricotta Cheese
  • 15 ounces Cottage Cheese
  • 1 cup Parmesan Cheese
  • 10 ounces Frozen Cut Spinach, thawed, drained, sqeezed

Step 5

Mix ingredients for filling

Ingredients

  • 1 pound Mozzarella Cheese, Thin slices

Step 6

In baking dish, pour sauce on floor. Add a layer of noodles. Cover with filling layer. Cover with mozzarella. REpeat sauce, noodles, filling, mozz. Bake at 350 uncovered for 30-40 minutes or until golden. Cool for 15.
