Enchiladas Suizas

Step 1

Preheat oven to 375 degrees. Spray 2 11x7x2 inch baking dish with cooking spray, set aside.


  • 16 ounces Del Real Chile Verde

Step 2

Pour the Chile Verde (with the green sauce) into a large bowl. Using 2 forks, shred the pork into loose shreds; blend well.


  • 1 cup Shredded Monterey Jack Cheese
  • 13 cup Crema, or sour cream
  • 13 cup Green Onion, sliced

Step 3

Add jack cheese, sour cream and onions; blend well.


  • 12 Corn Tortillas

Step 4

Place about 1/3 cup down the center of each tortilla. Roll to close and place enchiladas, seam side down, into prepared baking dishes.


  • 19 ounces Green Enchilada Sauce

Step 5

Pour the enchilada sauce over the enchiladas. Bake, covered, 35-45 minutes or until heated through.

Step 6

The last 5 minutes of baking, sprinkle with remaining cheese and green onions down the center of the enchiladas. Dollop each enchilada with remaining sour cream and serve.
