English Muffin Bread

This is a yeasted batter dough that you don't even need a mixer to make. No kneading, no shaping, no pinching, nothing! Just dump in the ingredients and stir it all together. There's hardly any more work than that. Total rising time is just one hour. Makes (2) 4x8 Loaves.



  • 5 cups Bread Flour, can substitute half with white whole wheat
  • 4 12 teaspoons Instant Yeast, two .25 oz envelopes rapid-rise yeast
  • 1 tablespoon Sugar
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Baking Soda

Step 1

Place flour, yeast, sugar, salt, and baking soda into a large mixing bowl. Whisk well to combine.


  • 3 cups Whole Milk, i used 1 % and it was fine

Step 2

In a microwave safe measuring cup, gradually heat the milk to 120 degrees.

Step 3

Make a slight well in the center of the flour mixture and pour the warm milk into it. Stir with a wooden spoon until combined and dough starts pulling away from the sides of the bowl.

Step 4

Cover the bowl with plastic wrap that's been lightly sprayed with vegetable oil. Let sit in a warm place to rise for 30 minutes. I put it in the microwave since it was warm from heating up the milk. NOTE: It is very important to spray the wrap. This is a very sticky dough.


  • Corn Meal, to sprinkle in pans

Step 5

Spray two 8 1/2 x 4 1/2 inch loaf pans with cooking spray and dust with cornmeal. Give dough a stir with a rubber spatula to knock it down a bit. Divide the dough as evenly as possible between the two loaf pans. The batter will be sticky and should fill the pans about 2/3 of the way. Use a rubber spatula to gently coax the batter into the corners.

Step 6

Cover the pans with greased plastic wrap. Let sit in warm place to rise for 30 minutes. The dough will rise to the top of the pans. NOTE: Again, it is very important to spray the wrap.

Step 7

Preheat oven to 375 degrees. Remove wrap from pans. Bake on middle rack for 30 minutes, rotating pans back-to-front and side-to-side halfway through. Loaves will be a nice golden brown and the internal temperature of the loaves will be 200 degrees when done.
