Step 1

Preheat to 450 conventional oven, 425 convection


  • 1 12 cups of all purpose flour
  • 2 tablespoons Baking Powder
  • 2 tablespoons Granulated Sugar
  • 12 tablespoon Salt
  • 2 ounces beechers flagship cheese grated
  • 14 cup Fresh Chives
  • 34 cup Heavy Whipping Cream
  • 34 cup low fat cultured buttermilk

Step 2

Combine all dry ingredients in a large mixing bowl then add wet ingredients, cheese and herbs

Step 3

Mix with wooden spoon for about 2 minutes, add a little more flour if the dough feels too wet. Flatten out dough to 1 inch thickness by hand on a well floured surface. Fold one half of the dough over itself (like you are closing a book) and press to flatten out again, repeating for 5 folds.

Step 4

Cut desired shapes ( this recipe should yield about a dozen squares at 2" by 2". Bake for 16-18 minutes until golden brown on top, let cool for 5 minutes and serve.
