The winning recipe (in the Vans Natural Foods sponsored Recipe Contest) is a fantastic weight loss breakfast recipe that is so tasty you will want it every morning! I hope your gardens are full of zucchini and yellow squash! It's healthy but also has such great flavor and kept me full for three hours.

Directions

 

Step 1

Preheat Oven to 400

Ingredients

  • 1 Yellow Zucchini Squash, peeled and thinly sliced
  • 1 Zucchini, peeded and thinly sliced
  • 18 Red Onion, thinly sliced

Step 2

Spread squash, zucchini, and onion slices in a 9X13 pan

Ingredients

  • 1 tablespoon Spanish Basil Olive Oil

Step 3

Drizzle 1 T Spanish Basil Olive Oil over all vegetables and lightly salt Bake at 400 for 20 minutes

Ingredients

  • 2 Eggs
  • Salt

Step 4

Cook 2 scrambled eggs, omelet style in a small frying pan with 1 tsp Spanish Basil Olive Oil Lightly salt

Ingredients

  • 1 Multigrain Waffle, Vans brand, toasted

Step 5

Layer toasted Vans Multigrain Waffle with Egg and Top with Zucchini, Squash, and Onion.
