The winning recipe (in the Vans Natural Foods sponsored Recipe Contest) is a fantastic weight loss breakfast recipe that is so tasty you will want it every morning! I hope your gardens are full of zucchini and yellow squash! It's healthy but also has such great flavor and kept me full for three hours.

Preheat Oven to 400

Spread squash, zucchini, and onion slices in a 9X13 pan
