Farfalle With Mushrooms And Spinach

Great, low-sodium side dish



  • 6 ounces Bow Tie Pasta

Step 1

Cook pasta according to package directions. Drain well.


  • 1 tablespoon Olive Oil

Step 2

Meanwhile, in a large skillet, heat oil over medium heat.


  • 1 cup Portobello Mushroom
  • 1 Onion
  • 2 cloves Garlic

Step 3

Add onion, mushrooms, and garlic; cook and stir for 2 to 3 minutes or until mushrooms are nearly tender.


  • 4 cups Spinach, sliced thin
  • 1 teaspoon Fresh Thyme, snipped
  • 18 teaspoon Pepper

Step 4

Stir in spinach, thyme, and pepper; cook 1 minute or until heated through and spinach is slightly wilted.

Step 5

Stir in cooked pasta; toss gently to mix.


  • 2 tablespoons Shredded Parmesan Cheese

Step 6

Sprinkle with cheese. Makes 4 side-dish servings.
