Fideo With Chorizo And Shrimp

  • 2 tablespoons Olive Oil
  • 8 ounces Fideo or Thin Spaghetti Noodles, broken into 2 in pieces

Step 1

Heat oil in shallow pot until hot but not smoking. Add noodles and cook, stirring frequently, until toasted, 5-6 minutes. Remove noodles from pot and set aside.


  • 8 ounces Chorizo
  • 12 Onion, diced
  • Salt, to taste
  • Pepper, to taste
  • 14 teaspoon Cumin
  • 1 can Diced Tomatoes
  • 3 cups Chicken Broth
  • 1 pound Medium Shrimp, peeled and deveined
  • Queso Fresco, for garnish

Step 2

Add chorizo to pot and cook, breaking up with spoon. Cook for 2-3 minutes, add onion and cook until soft. Season with salt, pepper, and cumin. Add the noodles back to the pot. Stir in tomatoes and 2 cups broth. Boil, stirring occasionally, until most of the broth has been absorbed. Season the shrimp with additional salt and pepper. Stir it into the pot with the last cup of chicken broth. Simmer until the shrimp is cooked, and the liquid is almost all absorbed, 10-12 minutes. Season to taste. Spoon into bowls and serve with queso fresco.
