Fiesta Corn Bread

  • 1 cup Corn Meal
  • 1 cup Whole Wheat Flour, pastry
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 12 teaspoon Sea Salt
  • 12 teaspoon Dried Tarragon

Step 1

Preheat the oven to 350 degrees Fahrenheit. In a large bowl, place the cornmeal, flour, baking powder, baking soda, salt, and tarragon and mix well.


  • 34 cup Frozen Corn, thawed or fresh off the cob
  • 13 cup Unsweetened Applesauce
  • 2 tablespoons Maple Syrup
  • 1 Egg Replacer, 1 tablespoon ground flax seed meal mixed with 3 tablespoons of water
  • 1 13 cups Soy Milk

Step 2

Add the corn, applesauce, and maple syrup to the dry ingredients and mix. Add the egg replacer and milk and stir until everything is well mixed. Pour into a 9" x 9" nonstick baking dish. Bake for 35 minutes, or until the top is firm and a knife inserted in the center comes out clean. Cool before serving.

Step 3

If you want a more Italian herb flavor, add 1 teaspoon of dried oregano and 1 teaspoon of dried basil.
