Fluffy Macadamia Feta

This 'cheese' is a raw foodie's delight and goes well with any salad.



  • 4 cups Raw Macadamia Nuts, soaked for 1 hr or more
  • 14 cup Fresh Squeezed Lemon Juice
  • 2 tablespoons Nutritional Yeast
  • 1 Green Onion, white and 1 inch green, minced
  • 2 teaspoons Sea Salt

Step 1

In a food processor, thoroughly grind all the ingredients, but leave it a bit chunky.

Step 2

Drop heaping teaspoonfuls onto Teflex-lined dehydrator trays and dehydrate at 115 F for 4 to 6 hrs, or until dry on the outside and still tender on the inside. Store in an airtight container in the refrigerator for up to a week or so.
