French Silk Pie

Step 1

For the crust: Preheat the oven to 350 degrees.

Step 2

Chill a mixing bowl in the freezer.


  • 12 Graham Crackers
  • 13 cup Butter, melted
  • 13 cup Sugar

Step 3

Crush the crackers in a ziplock bag. Pour into a bowl and stir in the melted butter and sugar. Press into a pie pan and bake until golden and set, 5 minutes. Remove from the oven and set aside to cool slightly.


  • 4 ounces Unsweetened Baking Chocolate

Step 4

For the filling: melt the baking chocolate in a microwave safe bowl. Microwave for 30 seconds, stir then continue for 15 seconds each time until melted. Set aside to cool.


  • 1 12 cups Sugar
  • 2 sticks Salted Butter, softened but still cold

Step 5

Get the chilled bowl out of the freezer, beat the sugar and butter until fluffy, 1-2 minutes.


  • 1 teaspoon Vanilla Extract

Step 6

When the melted chocolate is cooled, drizzle it over the butter/sugar mixture. Add the vanilla. Beat the mixture thoroughly until combined.


  • 4 Eggs, cold

Step 7

Turn your mixer to a medium speed, add in the one egg at a time, leaving 5 minutes between of beating before adding in the rest. Once the pie filling is well mixed, pour it into the baked pie shell. Smooth out the pie filling and place into the fridge to chill for at least 2 hours (preferably longer).


  • 1 12 cups Heavy Cream
  • 14 cup Powdered Sugar
  • Semisweet Chocolate Square, for grating

Step 8

For the topping: Add the heavy cream and sugar to a bowl, whip until stiff peaks form. Cover the pies with a thick layer of cream. Grate the chocolate over the top.
