Delicious fish tacos with veggies and a cream sauce.

Ingredients
Step 1
Heat a skillet over medium to high heat. Add carrots and corn and cook until corn is browned a little and the carrots are softer (but still have a crunch). Set aside and cover to keep warm.

Step 2
Add the fish fillets to the skillet. Cook for 3 - 4 minutes and then flip. Cook for another 2 minutes.

Step 3
Place a spoonful of the Jalapeno cheese sauce on the tortilla. Add slices of avocado, cheddar, the carrot/corn mixture, and the fish. Serve and enjoy.
