Fresh Fish Tacos

Delicious fish tacos with veggies and a cream sauce.

Directions

Ingredients

  • 12 cup Carrots, julienned
  • 1 Corn, Cut the kernels off the corn and set aside.

Step 1

Heat a skillet over medium to high heat. Add carrots and corn and cook until corn is browned a little and the carrots are softer (but still have a crunch). Set aside and cover to keep warm.

Ingredients

  • 4 Fish Fillets, Tilapia or Swai work well.

Step 2

Add the fish fillets to the skillet. Cook for 3 - 4 minutes and then flip. Cook for another 2 minutes.

  • 12 Avocado, Sliced thinly
  • 14 cup Extra Sharp Cheddar
  • 4 Tortillas, Taco sized
  • 4 Jalapeno Cheese Sauce, We use the kind from Zocalo restaurant (a Brigantine restaurant). It is a creamy white sauce with a little spice.

Step 3

Place a spoonful of the Jalapeno cheese sauce on the tortilla. Add slices of avocado, cheddar, the carrot/corn mixture, and the fish. Serve and enjoy.
