Garlic Confit

Garlic Confit

Yields two dozen garlic gloves



Step 1

Preheat oven to 325 degrees.


  • 2 heads Garlic, broken into cloves (remove any excess papery skins, but do not peel)
  • 5 Fresh Bay Leaves
  • 1 teaspoon Whole Black Peppercorns

Step 2

In a small ovenproof dish or pot, combine garlic cloves, bay leaves and peppercorns.


  • Extra Virgin Olive Oil

Step 3

Cover completely with oil, tightly cover pot with lid or foil, and bake 1 hour or longer, until cloves are very soft. Let cool.

Step 4

Strain oil into a jar, peel garlic cloves and place in oil. Use immediately or refrigerate up to 1 week; bring to room temperature before using.
