Gingered Baby Carrots |

Carrots seasoned with Ginger, glazed in butter and honey, and served on a bed of mint. Great side dish.

Step 1
Preheat the oven to 400. Use pan that can hold carrots side by side. Put butter in pan and melt in oven (don't burn butter). Remove from oven and stir ginger and honey in.

Step 2
Add carrots and stir to coat evenly. Season with Salt and pepper. If mint is available, sprinkle with mint. Spread carrots in single layer. Roast carrots for 35-45 minutes until golden, glazed, and tender. Stir several times.

Optional: Sprinkle more chopped mint. Add lemon juice. Serve on a bed of mint sprigs.
