Gingered Lentil Sandwich Spread

From the cookbook: "Gingered lentil sandwich spread tastes scrumptious on whole wheat toast with lettuce, tomato and mayonnaise or wrapped snugly in a whole wheat chappatti. Works well as a crackers spread for parties, too.



  • 2 cups Lentils, cooked
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 teaspoons Fresh Ginger, grated
  • 1 tablespoon Whole Grain Mustard
  • 3 Mushrooms, sliced
  • 2 Scallions, sliced
  • 12 teaspoon Sea Salt
  • 14 cup Water

Step 1

Put all ingredients in food processor or blender, blend until smooth. Will keep in the refrigerator for several days.
