Greek Frittata

A delicious dish that can use up left-over ingredients from making a Greek salad; or go crazy and replace with your own filling!

Directions

 

Step 1

Preheat oven to broil.

Ingredients

  • 6 Eggs, beaten
  • 1 pinch Kosher Salt
  • 12 teaspoon Black Pepper
  • 4 ounces Feta Cheese, crumbled
  • 1 ounce Parmesan Cheese, grated

Step 2

In a medium bowl, use a fork to lightly beat eggs. Blend in salt, pepper, and cheese.

Ingredients

  • 12 pound Ground Lamb, (or beef)

Step 3

Brown the lamb or beef in a 8- or 10-inch skillet. Drain grease, and remove from heat.

Ingredients

  • 1 teaspoon Butter

Step 4

Heat 12-inch non-stick saute pan over medium high heat. Coat the bottom of the pan with butter by rubbing the end of the stick over the entire surface.

Ingredients

  • 12 cup Yellow Bell Pepper, chopped
  • 12 cup Green Bell Pepper, chopped

Step 5

Add chopped pepper and lamb to pan, and saute for 2 to 3 minutes.
 

Step 6

Pour egg mixture into pan, and stir with rubber spatula. Cook for 4 to 5 minutes, or until the egg is firm on the bottom and is starting to firm on top.

Ingredients

  • 1 tablespoon Fresh Parsley, chopped

Step 7

Sprinkle with parsley.
 

Step 8

Place pan in oven, and broil for 4 minutes, until light brown on top.
 

Step 9

Remove from pan by sliding spatula around the sides of the frittata, then sliding onto a cutting board. Cut with pizza cutter into 4-6 servings. Serve immediately.
