Green Chili Potato Cheese Soup

  • 4 large Potato, peeled and chopped
  • 1 small Onion, chopped
  • 4 cups Chicken Broth
  • 1 tablespoon Salt
  • 1 cup Milk
  • 1 can Chopped Green Chilis, 4 oz
  • 1 cup Cheese, shredded
  • Bacon, cooked and crumbled
  • Pepper

Step 1

Place potatoes and onion in crock pot. Cover with broth, adding more if needed. Add salt. Cover and cook on high 2-3 hours until potatoes are tender. Mash half the potatoes with fork. Add milk, chilis, and cheese. Cover and cook on high 30-45 minutes. Add more salt and pepper to taste. If too thick, add more chicken broth. Serve with extra cheese and bacon.
