Grilled Artichoke And Black Olive Pizza

This is one of our favorite grilled pizzas in the summertime but can also easily be done in the oven.



  • Olive Oil
  • 1 Pizza Dough, make your own or most stores sell fresh pizza dough

Step 1

If dough has been refrigerated, allow to come up to room temperature. Coat the dough with a very small amount of olive oil to prevent sticking. On sheet of parchment paper, roll or stretch dough out into roughly a 12 x 16 inch rectangle.


  • 12 can Black Olives, drained
  • 12 can Canned Artichoke Hearts, packed in water, drained

Step 2

Slice olives and cut artichoke hearts into bite-sized pieces.

Step 3

Preheat grill on low heat. When grill has heated, carefully transfer pizza dough from parchment paper to the grill. Close cover and grill just for a couple of minutes. Just until dough has hardened up a little.


  • 12 cup Fresh Basil Pesto, or to taste (make your own or store bought is fine)
  • 4 ounces Fresh Mozzarella, (or more to taste) thinly sliced

Step 4

Flip dough over and top with the pesto, artichokes and black olives. Scatter slices of mozzarella over the top. It is not necessary to cover pizza completely. Close lid and grill until bottom is golden brown and the cheese has melted.

Step 5

Slice into squares and serve.

Step 6

Alternate Cooking Method: Preheat oven to 450 degrees. Place dough onto parchment lined baking sheet. Top with toppings. Bake on the second rack from the bottom for approximately 12 minutes or until cheese has melted and bottom of pizza is golden brown.
