Grilled Asparagus with Green Peppercorn Vinegrette

A delicious way to mix up how you serve Asparagus.

Directions

Ingredients

  • 3 tablespoons White Wine Vinegar
  • 2 teaspoons Dijon Mustard
  • 12 teaspoon Kosher Salt
  • 14 teaspoon Freshly Ground Black Pepper
  • 14 cup Extra Virgin Olive Oil
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Green Peppercorns, in brine, drained

Step 1

Whisk together the vinegar, mustard, salt and pepper in a small bowl until combined. Slowly whisk in the olive oil until emulsified and stir in the peppercorns. Let the vinaigrette sit at room temperature for 15 minutes before serving. Vinaigrette can be made up to 8 hours in advance and refrigerated.

Ingredients

  • 1 pound Asparagus, fresh, trimmed
  • 2 tablespoons Canola Oil
  • Salt
  • Pepper

Step 2

Heat the grill to high. Toss asparagus with the canola oil and season with salt and pepper. Grill until tender, about 5 to 7 minutes.
 

Step 3

Place grilled asparagus on a platter and drizzle the vinaigrette over the top.
