Grilled Cheese With Spicy Havarti, Cilantro Pesto And Roast Tomatoes

  • 1 bunch Fresh Cilantro
  • 14 cup Toasted Pine Nuts
  • 2 cloves Garlic
  • 1 Lemon
  • 14 cup Grated Parmesan Cheese
  • 12 cup Extra Virgin Olive Oil
  • 1 pinch Red Pepper Flakes, or cayenne pepper

Step 1

Place cilantro, pine nuts, garlic, the lemon juice and parmesan in food processor. as you pulse the ingredients add the olive oil until pesto is smooth. season with salt and pepper.


  • 2 slices Sourdough Sandwich Bread, or other sturdy white bread
  • 14 cup Havarti, with jalapeno or pepper jack
  • 14 cup Fire-Roasted Tomatoes
  • 1 tablespoon Butter

Step 2

Over medium heat, warm a medium sized saute pan. Butter one side only of the slices of bread and put into saute pan. Divide cheese, evenly, among the slices of bread. Cook adjusting heat, if necessary, to melt the cheese and lightly brown the butter sides of the bread. When cheese is melted, remove bread from pan and place on a cutting board. Spread the pesto on one side of the sandwich and place the tomatoes on the other. Put sandwich together and cut in half. Enjoy!
