Grilled Corn With Cilantro Butter

Step 1

Preheat grill to medium heat.


  • 34 cup Butter, Softened
  • 14 cup cilantro, coarsely chopped
  • 1 Lime, zested and juiced
  • 1 teaspoon Sea Salt
  • 14 teaspoon Pepper

Step 2

Mix butter, cilantro, 1 Tbsp lime juice, 1 tsp lime zest, salt and pepper. Cover tightly with plastic wrap and chill in fridge for 30 min or until ready to use.


  • 8 Ears of Corn

Step 3

Husk the corn and grill over medium heat, turning occasionally on all sides, until speckled with char spots and tender, about 8-10 minutes.


  • Cojita Cheese, grated

Step 4

Remove corn from the grill and serve with cilantro butter and grated cojita cheese.
