Guinness Slow Cooker Corned Beef

Guinness Slow Cooker Corned Beef

Easy recipe for corned beef. Really good served with Braised Cabbage and Carrots (see additional recipe).

NOTE: Some corned beef can be very salty. If salt is an issue for you try bringing the corned beef to a boil in plain water first, discarding the water, and bringing it to a boil in plain water again, and discarding that water before placing the corned beef into the slow cooker.



  • 4 pounds Corned Beef Brisket, (flat cut preferred)

Step 1

Rinse the brisket well, remove any excess fat and place into the slow cooker. You can use the spice packet that comes with the brisket but pickling spices add much better flavor. If you choose to use the packet, then omit the 1 Tablespoon pickling spice in step 2.


  • 1 medium Onion, sliced
  • 1 clove Garlic, pressed
  • 1 bottle Irish Stout, guinness preferred
  • 1 tablespoon Pickling Spice

Step 2

Sprinkle the pickling spice over the top of the corned beef. Add the onions and garlic. Pour the beer over the top.

Step 3

Cook on Low until fork tender. About 8-10 hours. I usually start it on High for the first 1-2 hours to get the meat up to a safe temperature faster. Then turn down to Low for 6 hours or so.
