Ham and Cheese Omelette |

Everybody knows what goes in an omelette, but the secret to this is the preparation method. Ideally, an omelette is fluffy with virtually no browned egg, and the broiler is the trick.

Step 1
Preheat broiler.

Grate cheese and chop ham. Set aside

Beat the eggs until light. This is an important step. You want the eggs to have some air incorporated into them by beating.

Spray pan with cooking spray. I add olive oil because I like the flavor, but you could omit this. Heat pan over medium to low heat. Add eggs. With rubber spatula, draw with strokes toward center, pulling in the cooked egg and letting the uncooked egg fill in behind. The tops will remain moist. This is okay for now. Err your heat on the side of too cool so the eggs don't brown.

Step 5
Place the whole omelette pan underneath the broiler. The broiler will finish cooking the moist tops of the eggs. Because some air was whipped into the eggs, they'll even start to puff up.

Step 6
Just as tops of eggs become dry, place cheese and ham on half and return underneath broiler until cheese begins to melt.

Step 7
Remove from broiler. Fold in half and serve immediately.
