Harpoon India Pale Ale (IPA) is a delicious Boston-based bestselling ale. I sought to achieve a reasonable substitute I could on the west coast. I don't have access to any bottled Harpoon IPA to taste side-by-side. I sense that this recipe provides a fuller-bodied ale, but with a similar flavor to the original. This recipe is somewhat less bitter than some IPAs.

Step 1

NOTE: IPAs require excellent hop extraction, so it's important to try to have 4 gallons or more in the boil and top the batch to 5 gallons.

Ingredients

  • 1 gallon Water, cold

Step 2

Starting with tap water as cold as it will run, aerate this water with an air pump and aquarium stone while the rest of the brewing process takes place.

Step 3

Bring 4 gallons of water to 150-155 degrees.

  • 1 pound Victory Malt, crushed
  • 1 pound Munich Malt, crushed

Step 4

Place malted grains in a grain bag. Steep in the 150-155 degree water for 30 minutes.

Ingredients

  • 6 58 pounds Light Malt Extract (Liquid), Muntons brand
  • 12 pound Dry Light Malt Extract

Step 5

Turn off heat. Add liquid and dry malt extract and stir thoroughly until no malt is apparently settled to bottom. When thoroughly stirred, return heat to high and bring to boil.

  • 1 ounce Centennial Hops Pellets, 8 AAUs or 1 ounce at 8% alpha acid

Step 6

Once pot is boiling, set timer for 60 minutes and add Centennial Hops. Leaf hops can be substituted.

  • 1 ounce Kent Golding Hops Pellets, 4 AAUs or 1 ounce at 4% alpha acid
  • 1 teaspoon Irish Moss

Step 7

When boil is at 30-minute mark, add Kent Golding Hops. American Golding can be substituted. Add Irish Moss to boil.
 

Step 8

When timer is complete, remove from heat. Cool rapidly with coil chiller until temperature is approximately 90-degrees. You can calculate your exact temperature by measuring the temperature of your aerated cold water, aiming for a final mix of 5 gallons at 80-degrees.
 

Step 9

Strain cooled wort into clean and sanitized fermenter. Add aerated cold water to 5-gallon mark and test temperature, aiming for 80-degrees.

  • 1 package Wyeast Irish Ale Yeast, see instructions for substitutes

Step 10

Pitch yeast at 80-degrees. Original recipe called for White Labs Bedford British Ale, White Labs Burton Ale, Wyeast American Ale III, or Coopers Single Strain Yeast. Unable to get those, the Irish Ale Yeast worked nicely.

Ingredients

  • 1 ounce Liberty Hops Pellets

Step 11

Ferment 7-10 days. Rack to secondary fermenter and add Liberty Hops for dry hopping. Bottle as usual (I always keg). Alternatively, I skip the secondary and add Liberty Hops in a strainer bag to the keg, force carbonate, and refrigerate.
 

Step 12

Within a couple days, this beer will have strong aromas of the original grains. After 10 days of keg conditioning, this raw grain aroma mellows and leaves a wonderful tasting IPA.
