Hashed Browns

Great for breakfast and even better the next day (or cold straight out of the fridge later that night)



  • 5 tablespoons Unsalted Butter

Step 1

Melt the butter in a large (10- to 12-inch) saute pan


  • 1 pound Boiling Potato, Peeled & 1/2 inch diced
  • 1 Yellow Onion, chopped
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Coarse Ground Black Pepper

Step 2

Add the potatoes, onions, salt and pepper and cook over medium-low heat for 15 to 20 minutes, turning occasionally with a spatula or spoon until the potatoes are evenly browned and cooked through


  • 2 tablespoons Scallion, minced, green and white parts

Step 3

Turn off the heat and add scallions.

Step 4

Serve those bad boys hot.
