I Don't Carrot All What They Say Soup

  • 2 tablespoons Coconut Oil

Step 1

Heat the Coconut Oil in a med. saucepan over med.-high.


  • 1 medium Onion, chopped

Step 2

Add the Onion; cook, stirring frequently, until softened.


  • 12 teaspoon Ground Cumin
  • 14 teaspoon Ground Caraway Seed
  • 14 teaspoon Harissa Paste
  • 1 pound Carrot, peeled & chopped

Step 3

Stir in the Carrots, Ground Cumin, Caraway Seeds, & Harissa.


  • 5 cups Water, boiling

Step 4

Add the boiling Water; reduce to a simmer & cook 40-45 min.s, until carrots are tender.

Step 5

Remove from heat & let stand 30 min.s. to let flavors blend.


  • 1 tablespoon Apple Cider Vinegar

Step 6

Puree in a blender w/ the Vinegar until smooth, adding more vinegar & salt to taste.


  • 1 12 cups Baby Arugula

Step 7

Garnish w/ Baby Arugula.
