Island Chicken Marinade

  • 2 tablespoons Olive Oil
  • 2 tablespoons Canola Oil
  • 1 large Chopped Onion
  • 2 tablespoons Minced Garlic

Step 1

In a large saucepan,heat canola and olive oil over medium heat. Add onions and garlic and let cook covered, for 4-6 minutes-until the onions are soft and translucent. Stir often as they cook.


  • 13 cup Packed Dark Brown Sugar
  • 1 12 teaspoons Ground Allspice
  • 34 teaspoon Ground Black Pepper
  • 12 teaspoon Ground Cloves
  • 34 teaspoon Dried Thyme
  • 12 teaspoon Ground Cinnamon
  • 1 pinch Cayenne

Step 2

Stir in brown sugar, allspice,pepper, cloves,thyme, cinnamon and cayenne and remove from heat.


  • 12 cup Soy Sauce
  • 12 cup Red Wine Vinegar

Step 3

Stir in soy and vinegar and cool completely before marinating.

Step 4

Let marinate for a minnimum of 2 hrs up to 24 hours.
