Jalapeno Hot Sauce

Use up the abundance of jalapenos from the garden with a hot sauce that replaces green Tobasco.

Directions

Ingredients

  • 20 Jalapeno Peppers, seeded and sliced
  • 1 Yellow Onion, medium, diced
  • 3 cloves Garlic, diced

Step 1

Seed peppers. Size of slices doesn't matter. Dice onion and garlic.

Ingredients

  • 1 tablespoon Canola Oil
  • 34 teaspoon Salt

Step 2

Saute peppers, onions, and garlic over high heat with oil and salt, about 4 minutes to start them mildly browning.

Ingredients

  • 2 cups Water

Step 3

Add water and simmer 20 minutes. Water will mostly reduce away.

Ingredients

  • 1 cup Distilled White Vinegar

Step 4

Let cool if desired. Put pepper mixture in food processor. Process while dribbling in vinegar to emulsify.
 

Step 5

Pack in mason jars and refrigerate.
