Jerk-spiced Chicken With Crunchy Peanut Slaw

Directions

Ingredients

  • 200 grams White Cabbage, shredded
  • 12 small Red Onion, finely sliced
  • 1 Lime, juiced
  • 1 tablespoon Golden Caster Sugar
  • 2 tablespoons Caribbean Jerk Marinade
  • 4 whole Chicken Thigh, skin removed

Step 1

Heat the oven to 200C/fan180C/gas 6. Put the cabbage, onion, lime juice and sugar in a bowl with a large pinch of salt and toss. Rub the paste into the chicken. Cook for 45 minutes, turning every 10-15 minutes until the chicken is glazed and cooked through.

Ingredients

  • 1 small Green Bell Pepper, diced
  • 1 Red Chile Pepper, finely chopped
  • 2 tablespoons Unsalted Roasted Peanuts, roughly chopped

Step 2

Toss the rest of the ingredients into the slaw and serve with the chicken.
